🍽️ Stir-fried Zucchini and Tomatoes

Ingredients
- 400 g zucchini
- 1 tomato
- 2 garlic cloves
- 3 tbsp peanut oil
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tsp sambal oelek
- salt
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Immediately plunge the tomatoes into cold water.
- 3. Peel the skin off the tomatoes.
- 4. Cut the tomatoes in half.
- 5. Remove the inner core with the seeds.
- 6. Cut the tomato flesh into strips.
- 7. Wash the zucchini thoroughly.
- 8. Cut off the hard ends of the zucchini.
- 9. Cut the zucchini into thick pieces about 4 cm long.
- 10. Sprinkle the zucchini with a pinch of salt.
- 11. Heat 2 tablespoons of oil in a wok.
- 12. Fry the zucchini for 8 minutes while stirring constantly.
- 13. Push the zucchini to the side of the wok.
- 14. Add the tomato strips to the center of the wok.
- 15. Peel the garlic clove.
- 16. Press the garlic directly into the wok.
- 17. Fry the tomatoes and garlic in the remaining oil.
- 18. Stir the zucchini back into the tomatoes.
- 19. Season the dish with soy sauce.
- 20. Add a little sugar.
- 21. Add Sambal Oelek (a spicy chili paste).
- 22. Finally, adjust the seasoning with salt.
