  3. 3. Cut the zucchini lengthwise into four strips.
  4. 4. Cut the strips into pieces about 3 cm long.
  5. 5. Peel the garlic.
  6. 6. Slice the garlic into thin rounds.
  7. 7. Add the vinegar, 300 ml of water, the salt, and the sugar to a pot.
  8. 8. Bring the liquid to a boil.
  9. 9. Add the zucchini pieces to the pot.
  10. 10. Let the zucchini simmer for 1 minute.
  11. 11. Lift the zucchini out of the broth.
  12. 12. Fill the well-rinsed jars with the zucchini, peppercorns, garlic, and mint leaves.
  13. 13. Bring the broth in the pot to a boil again.
  14. 14. Pour the hot broth over the vegetables in the jars.
  15. 15. Ensure the vegetables are completely covered.
  16. 16. Seal the jars tightly.
  17. 17. Let the jars cool down.
  18. 18. Store the jars in a cool and dark place.
