🍽️ Sweet and Sour Zucchini

Ingredients
- 5 zucchini
- 2 garlic cloves
- 250 ml white wine vinegar
- 2 tsp salt
- 200 g sugar
- 1 tbsp pink peppercorns
- 2 tbsp mint
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Remove the tough ends.
- 3. Cut the zucchini lengthwise into four strips.
- 4. Cut the strips into pieces about 3 cm long.
- 5. Peel the garlic.
- 6. Slice the garlic into thin rounds.
- 7. Add the vinegar, 300 ml of water, the salt, and the sugar to a pot.
- 8. Bring the liquid to a boil.
- 9. Add the zucchini pieces to the pot.
- 10. Let the zucchini simmer for 1 minute.
- 11. Lift the zucchini out of the broth.
- 12. Fill the well-rinsed jars with the zucchini, peppercorns, garlic, and mint leaves.
- 13. Bring the broth in the pot to a boil again.
- 14. Pour the hot broth over the vegetables in the jars.
- 15. Ensure the vegetables are completely covered.
- 16. Seal the jars tightly.
- 17. Let the jars cool down.
- 18. Store the jars in a cool and dark place.
