  1. 1. Thoroughly wash the zucchini under running water.
  2. 2. Remove the tough ends of the zucchini.
  3. 3. Cut the zucchini into very fine sticks or grate it finely.
  4. 4. Heat a splash of olive oil in a pan.
  5. 5. Sauté the zucchini over medium heat for 1 to 2 minutes.
  6. 6. Transfer the zucchini into a bowl.
  7. 7. Let the zucchini cool down to lukewarm.
  8. 8. Cut the ham into wide strips.
  9. 9. Wash the basil thoroughly.
  10. 10. Shake the basil dry.
  11. 11. Pluck the basil leaves off the stems.
  12. 12. Set aside a few nice leaves for decoration.
  13. 13. Chop the rest of the basil roughly.
  14. 14. Roast the pumpkin seeds in a dry pan without oil.
  15. 15. Remove the pan from the heat as soon as the seeds smell fragrant.
  16. 16. Add the ham strips to the cooled zucchini.
  17. 17. Add the chopped basil to the zucchini.
  18. 18. Season the salad with salt.
  19. 19. Add lemon juice.
  20. 20. Season with Szechuan pepper.
  21. 21. Sprinkle the finished salad with the roasted pumpkin seeds.
  22. 22. Garnish the salad with the reserved basil leaves.
