🥗 Fresh Zucchini and Ham Salad with Roasted Pumpkin Seeds

Ingredients
- 800 g zucchini (3 zucchini)
- 2 tbsp olive oil
- 350 g turkey ham (in slices)
- 2 stalks basil
- 60 g pumpkin seeds (4 tbsp)
- salt
- 3 tbsp lemon juice
- Szechuan pepper
Instructions
- 1. Thoroughly wash the zucchini under running water.
- 2. Remove the tough ends of the zucchini.
- 3. Cut the zucchini into very fine sticks or grate it finely.
- 4. Heat a splash of olive oil in a pan.
- 5. Sauté the zucchini over medium heat for 1 to 2 minutes.
- 6. Transfer the zucchini into a bowl.
- 7. Let the zucchini cool down to lukewarm.
- 8. Cut the ham into wide strips.
- 9. Wash the basil thoroughly.
- 10. Shake the basil dry.
- 11. Pluck the basil leaves off the stems.
- 12. Set aside a few nice leaves for decoration.
- 13. Chop the rest of the basil roughly.
- 14. Roast the pumpkin seeds in a dry pan without oil.
- 15. Remove the pan from the heat as soon as the seeds smell fragrant.
- 16. Add the ham strips to the cooled zucchini.
- 17. Add the chopped basil to the zucchini.
- 18. Season the salad with salt.
- 19. Add lemon juice.
- 20. Season with Szechuan pepper.
- 21. Sprinkle the finished salad with the roasted pumpkin seeds.
- 22. Garnish the salad with the reserved basil leaves.
