  1. 1. Wash the zucchini thoroughly.
  2. 2. Slice the zucchini into rounds about 1 cm thick.
  3. 3. Wash the bell peppers.
  4. 4. Remove the core and seeds from the bell peppers.
  5. 5. Cut the bell peppers into pieces about 3 cm in size.
  6. 6. Score a small cross into the bottom of the tomatoes.
  7. 7. Pour boiling water over the tomatoes.
  8. 8. Immediately transfer the tomatoes to cold water to stop the cooking process.
  9. 9. Peel the skin off the tomatoes.
  10. 10. Halve the tomatoes.
  11. 11. Remove the seeds and jelly-like interior from the tomatoes.
  12. 12. Roughly dice the tomato flesh.
  13. 13. Peel the onions.
  14. 14. Peel the garlic cloves.
  15. 15. Finely chop the onions and garlic.
  16. 16. Heat olive oil in a large pan.
  17. 17. Sauté the onions and garlic over medium heat until soft and translucent.
  18. 18. Add the zucchini and bell peppers to the pan.
  19. 19. Sauté the vegetables briefly.
  20. 20. Add the diced tomatoes.
  21. 21. Pour in 100 ml of vegetable broth.
  22. 22. Season with salt and pepper.
  23. 23. Simmer the ratatouille with the lid on for 15 to 20 minutes.
  24. 24. Add a little more broth if the pan becomes too dry.
  25. 25. Wash the fresh herbs.
  26. 26. Shake the herbs dry.
  27. 27. Finely chop the herbs.
  28. 28. Divide the ratatouille into four bowls.
  29. 29. Sprinkle the chopped herbs over the dish.
  30. 30. Serve the ratatouille warm.
