🍽️ Cozy Zucchini Ratatouille

Ingredients
- 250 g yellow zucchini
- 250 g green zucchini
- 150 g red bell peppers
- 150 g orange bell peppers
- 400 g tomatoes
- 2 onions
- 3 garlic cloves
- 3 tbsp olive oil
- sea salt
- pepper
- 10 g marjoram (0.5 bunch)
- 10 g parsley (0.5 bunch)
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Slice the zucchini into rounds about 1 cm thick.
- 3. Wash the bell peppers.
- 4. Remove the core and seeds from the bell peppers.
- 5. Cut the bell peppers into pieces about 3 cm in size.
- 6. Score a small cross into the bottom of the tomatoes.
- 7. Pour boiling water over the tomatoes.
- 8. Immediately transfer the tomatoes to cold water to stop the cooking process.
- 9. Peel the skin off the tomatoes.
- 10. Halve the tomatoes.
- 11. Remove the seeds and jelly-like interior from the tomatoes.
- 12. Roughly dice the tomato flesh.
- 13. Peel the onions.
- 14. Peel the garlic cloves.
- 15. Finely chop the onions and garlic.
- 16. Heat olive oil in a large pan.
- 17. Sauté the onions and garlic over medium heat until soft and translucent.
- 18. Add the zucchini and bell peppers to the pan.
- 19. Sauté the vegetables briefly.
- 20. Add the diced tomatoes.
- 21. Pour in 100 ml of vegetable broth.
- 22. Season with salt and pepper.
- 23. Simmer the ratatouille with the lid on for 15 to 20 minutes.
- 24. Add a little more broth if the pan becomes too dry.
- 25. Wash the fresh herbs.
- 26. Shake the herbs dry.
- 27. Finely chop the herbs.
- 28. Divide the ratatouille into four bowls.
- 29. Sprinkle the chopped herbs over the dish.
- 30. Serve the ratatouille warm.
