🍽️ Zucchini Omelette with Goat Cheese and Arugula

Ingredients
- 300 g large zucchini (1 large zucchini)
- 2 red onions
- 1 red bell pepper
- 6 eggs
- 200 ml milk (3.5% fat)
- salt
- pepper
- paprika powder
- 2 tbsp olive oil
- 130 g soft goat cheese (45% fat in dry matter)
- 125 g arugula
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Cut the zucchini in half lengthwise.
- 3. Slice the zucchini halves into thin slices.
- 4. Peel the onions.
- 5. Cut the onions in half.
- 6. Cut the onion halves into thin strips.
- 7. Cut the bell pepper in half.
- 8. Remove the seeds and white pith from the bell pepper.
- 9. Wash the cored bell pepper.
- 10. Cut the bell pepper into thin strips.
- 11. Whisk the eggs in a bowl.
- 12. Pour the milk into the eggs.
- 13. Whisk the eggs and milk together well.
- 14. Season the egg mixture with salt.
- 15. Season the egg mixture with pepper.
- 16. Add some paprika powder to the egg mixture.
- 17. Heat one tablespoon of oil in a frying pan.
- 18. Take half of the prepared vegetable mixture.
- 19. Add the vegetables to the hot pan.
- 20. Fry the vegetables for about five minutes.
- 21. Take half of the egg-milk mixture.
- 22. Pour the egg mixture over the fried vegetables.
- 23. Let the omelet set until it is firm.
- 24. Repeat the process with the remaining oil, vegetables, and egg mixture.
- 25. Slice the goat cheese into thin slices.
- 26. Wash the arugula thoroughly.
- 27. Shake the arugula dry.
- 28. Place the goat cheese slices on the finished omelets.
- 29. Distribute the arugula on the omelets.
- 30. Carefully remove the omelets from the pan.
- 31. Serve the omelets immediately.
