🍽️ Ground Meat Stuffed Zucchini in Tomato Sauce

Ingredients
- 1 slice stale country bread
- 1 beef tomato
- 50 g ground beef
- 1 egg
- 1 tbsp grated parmesan
- 4 zucchini (medium-sized, yellow)
- salt
- pepper (from the mill)
- 1 red chili pepper
- 1 onion
- 1 clove of garlic
- 1 tbsp oil
- 1 tsp flour
- 250 ml tomato juice
- 0.5 bunch basil
Instructions
- 1. Soak the bread in lukewarm water.
- 2. Squeeze the soaked bread well.
- 3. Tear the bread into small pieces with a fork.
- 4. Blanch the tomato briefly in boiling water.
- 5. Remove the skin from the tomato.
- 6. Dice the tomato into small cubes.
- 7. Add the tomato cubes, bread, ground beef, egg, and cheese to a bowl.
- 8. Wash the zucchini thoroughly.
- 9. Dry the zucchini.
- 10. Cut the zucchini in half lengthwise.
- 11. Scoop out some flesh from the zucchini halves with a teaspoon.
- 12. Season the hollowed zucchini halves with salt and pepper.
- 13. Finely chop the scooped-out zucchini flesh.
- 14. Wash the chili pepper thoroughly.
- 15. Cut the chili pepper lengthwise.
- 16. Remove the seeds from the chili pepper.
- 17. Remove the white inner skin of the chili pepper.
- 18. Dice the chili pepper into small cubes.
- 19. Peel the garlic.
- 20. Finely chop the garlic.
- 21. Heat oil in a shallow pot or pan.
- 22. Sauté the chopped zucchini flesh, onion, garlic, and chili over low heat.
- 23. Remove half of the sautéed mixture from the pot.
- 24. Add half of the mixture to the filling in the bowl.
- 25. Mix the filling well.
- 26. Sprinkle the remaining onion mixture in the pot with flour.
- 27. Toast the mixture briefly over medium heat.
- 28. Deglaze the mixture gradually with tomato juice.
- 29. Stir constantly until the sauce thickens.
- 30. Remove the pot from the heat.
- 31. Place the zucchini halves side by side in the sauce.
- 32. Distribute the filling evenly into the zucchini halves.
- 33. Cover the pot.
- 34. Bring the zucchini to a boil.
- 35. Cook the zucchini for about 20 minutes over low to medium heat.
- 36. Wash the basil thoroughly.
- 37. Pat the basil dry.
- 38. Roughly chop the basil leaves.
- 39. Warm the plates.
- 40. Arrange the zucchini on the warmed plates.
- 41. Sprinkle the zucchini with the basil.
- 42. Serve the zucchini immediately.
