🍽️ Stuffed Zucchini with Minced Meat and Tomato

Ingredients
- 2 large Zucchini (ca. 400 g)
- 1 Onion
- 1 Garlic clove
- 6 sprigs Thyme
- 4 Tomatoes
- 2 tbsp Olive oil
- 400 g Minced meat (mixed)
- Salt
- Pepper
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Cut the zucchini in half lengthwise.
- 3. Scoop out the inner flesh from the zucchini halves using a teaspoon.
- 4. Finely chop the removed zucchini flesh.
- 5. Peel the onion and the garlic.
- 6. Finely chop the onion and garlic.
- 7. Wash the thyme and shake it dry.
- 8. Set aside four thyme sprigs for decoration.
- 9. Strip the leaves from the remaining thyme sprigs.
- 10. Wash the tomatoes.
- 11. Cut the tomatoes in half.
- 12. Remove the seeds from the tomato halves.
- 13. Puree the tomato seeds finely using a hand blender.
- 14. Dice the tomato flesh into small cubes.
- 15. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 16. Heat one tablespoon of olive oil in a pan.
- 17. Sauté the onion, garlic, and zucchini flesh over low to medium heat for 3 to 4 minutes.
- 18. Remove the sautéed mixture from the pan and set it aside.
- 19. Heat another tablespoon of olive oil in the same pan.
- 20. Fry the minced meat over high heat, stirring until it is crumbly.
- 21. Add the sautéed onion mixture and the thyme leaves to the minced meat.
- 22. Season the filling generously with salt and pepper.
- 23. Add the pureed tomato seeds to the pan.
- 24. Let the mixture simmer briefly until the liquid has evaporated.
- 25. Fill the zucchini halves with the minced meat and tomato mixture.
