  1. 1. Wash the zucchini thoroughly.
  2. 2. Cut the zucchini in half lengthwise.
  3. 3. Scoop out the inner flesh from the zucchini halves using a teaspoon.
  4. 4. Finely chop the removed zucchini flesh.
  5. 5. Peel the onion and the garlic.

  8. 8. Set aside four thyme sprigs for decoration.
  9. 9. Strip the leaves from the remaining thyme sprigs.
  10. 10. Wash the tomatoes.

  12. 12. Remove the seeds from the tomato halves.
  13. 13. Puree the tomato seeds finely using a hand blender.
  14. 14. Dice the tomato flesh into small cubes.
  15. 15. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  16. 16. Heat one tablespoon of olive oil in a pan.
  17. 17. Sauté the onion, garlic, and zucchini flesh over low to medium heat for 3 to 4 minutes.
  18. 18. Remove the sautéed mixture from the pan and set it aside.
  19. 19. Heat another tablespoon of olive oil in the same pan.
  20. 20. Fry the minced meat over high heat, stirring until it is crumbly.
  21. 21. Add the sautéed onion mixture and the thyme leaves to the minced meat.
  22. 22. Season the filling generously with salt and pepper.
  23. 23. Add the pureed tomato seeds to the pan.
  24. 24. Let the mixture simmer briefly until the liquid has evaporated.
  25. 25. Fill the zucchini halves with the minced meat and tomato mixture.
