🍽️ Zucchini Stuffed with Meat and Pearl Barley

Ingredients
- 80 g Pearl barley
- Salt
- 1 Shallot
- 1 Clove of garlic
- Olive oil
- 400 g Ground beef
- 350 g Cherry tomatoes
- 100 ml Meat broth
- Pepper (from the mill)
- 2 tbsp coarsely chopped parsley
- 4 large Zucchini
- Butter (for the dish)
- 100 g freshly grated cheese (e.g. Gruyère)
- Dill flower (for garnishing)
Instructions
- 1. Rinse the pearl barley under cold running water in a sieve.
- 2. Place the pearl barley in a pot.
- 3. Cover them with water.
- 4. Add a pinch of salt.
- 5. Bring the water to a boil.
- 6. Cook the pearl barley for about 45 minutes.
- 7. Peel the shallot and the garlic.
- 8. Finely chop the shallot and garlic.
- 9. Heat oil in a hot pan.
- 10. Sauté the chopped onion mixture until translucent in the oil.
- 11. Add the minced meat to the pan.
- 12. Fry the meat until it is crumbly.
- 13. Wash the tomatoes.
- 14. Quarter the tomatoes.
- 15. Fold the tomato pieces into the meat.
- 16. Pour in the broth.
- 17. Season the mixture with salt and pepper.
- 18. Chop the parsley and fold it in.
- 19. Taste the filling and adjust seasoning if needed.
- 20. Simmer the mixture over medium heat for about 5 minutes.
- 21. Drain the cooked pearl barley.
- 22. Stir the pearl barley into the meat mixture.
- 23. Remove the pan from the heat.
- 24. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 25. Wash the zucchini.
- 26. Remove the tough ends of the zucchini.
- 27. Cut the zucchini in half lengthwise.
- 28. Scoop out the seeds with a teaspoon.
- 29. Grease a baking dish with butter.
- 30. Place the zucchini halves in the dish with the cut side facing up.
- 31. Fill the zucchini cavities with the meat and barley mixture.
- 32. Sprinkle the cheese over the filling.
- 33. Place the baking dish in the preheated oven.
- 34. Gratin the zucchini for about 30 minutes.
- 35. Remove the zucchini from the oven.
- 36. Garnish the dish with dill.
- 37. Serve the zucchini hot.
