🍰 Refreshing Zucchini-Mint Popsicles

Ingredients
- 2 zucchini
- 10 g ginger (1 piece)
- 30 g coconut blossom sugar (3 tbsp)
- 5 g mint (1 handful)
- 50 ml lemon juice
- 2 tbsp honey
Instructions
- 1. Wash the zucchini thoroughly and remove the hard ends.
- 2. Grate the peeled zucchini finely.
- 3. Peel the ginger piece and grate it finely as well.
- 4. Place the grated zucchini and ginger into a bowl.
- 5. Sprinkle the mixture with coconut blossom sugar.
- 6. Wash the mint leaves and shake off excess water.
- 7. Set aside a few nice mint leaves for decoration.
- 8. Mix the remaining mint leaves with the zucchini mixture.
- 9. Fill the zucchini mixture evenly into 8 popsicle molds.
- 10. Mix the lemon juice with 450 milliliters of water.
- 11. Stir the honey into the lemon-water mixture.
- 12. Carefully pour the liquid over the zucchini mixture in the molds.
- 13. Place the reserved mint leaves on top of the popsicles.
- 14. Place the molds in the freezer for about 1 hour.
- 15. Insert the wooden sticks centrally into the half-frozen popsicles.
- 16. Let the popsicles freeze completely for another 3 hours.
- 17. Carefully release the finished popsicles from the molds.
- 18. Serve the popsicles immediately to enjoy.
