  1. 1. Preheat a frying pan over medium heat.
  2. 2. Add the pine nuts to the hot pan.
  3. 3. Roast the nuts without added fat until they are golden brown.
  4. 4. Remove the roasted pine nuts from the pan.
  5. 5. Place them on a plate and let them cool down completely.
  6. 6. Take a large bowl.
  7. 7. Add the quark (a fresh dairy product similar to cottage cheese) to the bowl.
  8. 8. Add the sparkling mineral water.
  9. 9. Stir the mixture smoothly with a fork.
  10. 10. Wash the zucchini under running water.
  11. 11. Dry the zucchini with kitchen paper.
  12. 12. Remove the hard ends of the zucchini.
  13. 13. Cut the zucchini into very fine sticks.
  14. 14. Add the cut zucchini sticks to the quark.
  15. 15. Wash the parsley and the mint.
  16. 16. Shake the herbs dry.
  17. 17. Pluck the leaves from the stems.
  18. 18. Chop the herbs finely.
  19. 19. Add the chopped herbs to the quark.
  20. 20. Finely chop the cooled pine nuts.
  21. 21. Add the chopped pine nuts to the bowl.
  22. 22. Mix all ingredients well together.
  23. 23. Season the mixture with salt.
  24. 24. Season the mixture with pepper.
  25. 25. Take the whole grain breads.
  26. 26. Spread the zucchini herb quark onto the breads.
  27. 27. Serve the spread immediately.
