🍳 Crunchy Zucchini and Herb Quark Spread

Ingredients
- 2 tbsp Pine nuts
- 100 g Low-fat quark
- 2 tbsp Sparkling mineral water
- 200 g Zucchini (1 Zucchini)
- 4 sprigs Parsley
- 4 sprigs Mint
- Salt
- Pepper
- 4 slices Dark whole grain bread
Instructions
- 1. Preheat a frying pan over medium heat.
- 2. Add the pine nuts to the hot pan.
- 3. Roast the nuts without added fat until they are golden brown.
- 4. Remove the roasted pine nuts from the pan.
- 5. Place them on a plate and let them cool down completely.
- 6. Take a large bowl.
- 7. Add the quark (a fresh dairy product similar to cottage cheese) to the bowl.
- 8. Add the sparkling mineral water.
- 9. Stir the mixture smoothly with a fork.
- 10. Wash the zucchini under running water.
- 11. Dry the zucchini with kitchen paper.
- 12. Remove the hard ends of the zucchini.
- 13. Cut the zucchini into very fine sticks.
- 14. Add the cut zucchini sticks to the quark.
- 15. Wash the parsley and the mint.
- 16. Shake the herbs dry.
- 17. Pluck the leaves from the stems.
- 18. Chop the herbs finely.
- 19. Add the chopped herbs to the quark.
- 20. Finely chop the cooled pine nuts.
- 21. Add the chopped pine nuts to the bowl.
- 22. Mix all ingredients well together.
- 23. Season the mixture with salt.
- 24. Season the mixture with pepper.
- 25. Take the whole grain breads.
- 26. Spread the zucchini herb quark onto the breads.
- 27. Serve the spread immediately.
