🍽️ Zucchini Strips in Spicy Marinade with Feta and Orange

Ingredients
- 2 large zucchini
- 2 garlic cloves
- 1 small red chili pepper
- 5 tbsp olive oil
- 2 tbsp dark balsamic vinegar
- salt
- pepper (from the mill)
- 2 unwaxed oranges
- 200 g feta
- 0.5 bunch basil
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Cut off the hard ends on both sides.
- 3. Cut the zucchini into strips about 5 cm long and 1 cm thick.
- 4. Peel the garlic.
- 5. Finely chop the garlic.
- 6. Wash the chili pepper.
- 7. Cut the chili in half lengthwise.
- 8. Remove the seeds from the chili.
- 9. Finely chop the chili as well.
- 10. Heat 1 tablespoon of oil in a pan.
- 11. Add the zucchini strips, garlic, and chili to the pan.
- 12. Fry the ingredients, turning them occasionally.
- 13. Remove the fried zucchini from the pan.
- 14. Let the zucchini cool down completely.
- 15. Mix the cooled zucchini with the vinegar.
- 16. Add the remaining oil.
- 17. Season the mixture with salt and pepper.
- 18. Let the zucchini marinate for 1 hour.
- 19. Peel the oranges.
- 20. Remove the white pith layer as well.
- 21. Carefully separate the orange segments from the membranes.
- 22. Cut the feta cheese into cubes about 1 cm in size.
- 23. Rinse the basil briefly.
- 24. Shake the basil dry.
- 25. Pluck the basil leaves from the stems.
- 26. Mix the marinated zucchini with the orange segments.
- 27. Fold the feta into the mixture.
- 28. Distribute the dish onto plates.
- 29. Drizzle the remaining marinade over it.
- 30. Garnish with the basil leaves.
- 31. Serve the dish immediately.
