🍽️ Crunchy Zucchini in Spicy Mustard Marinade

Ingredients
- 2.5 kg zucchini
- 2 organic lemons
- 500 ml white wine vinegar
- 2 tbsp salt
- 8 tbsp honey
- 2 tbsp peppercorns
- 2 tbsp mustard seeds
- 1 bunch dill
Instructions
- 1. Wash the zucchini thoroughly under running water.
- 2. Slice the zucchini lengthwise into thin rounds.
- 3. Also wash the lemons thoroughly.
- 4. Slice the lemons into thin rounds.
- 5. Pour 500 milliliters of water into a bowl.
- 6. Add vinegar, salt, honey, peppercorns, and mustard seeds to the water.
- 7. Stir the marinade well until the honey and salt have dissolved.
- 8. Pour the marinade evenly over the zucchini and lemon slices.
- 9. Cover the bowl.
- 10. Place the bowl in a cool spot.
- 11. Let the vegetables marinate overnight.
- 12. The next day, transfer the vegetables and marinade into a large pot.
- 13. Bring the mixture to a boil on the stove.
- 14. Reduce the heat to low.
- 15. Let the vegetables simmer gently for 5 minutes.
- 16. Rinse the dill under running water.
- 17. Divide the fresh dill among the clean and sterilized jars.
- 18. Fill the jars with the hot broth and zucchini.
- 19. Seal the jars tightly immediately.
- 20. Place the jars upside down on their lids for 10 minutes.
- 21. Turn the jars back over.
- 22. Let the jars cool completely at room temperature.
