  1. 1. Thoroughly wash the zucchini under running water.
  2. 2. Cut the zucchini in half lengthwise.
  3. 3. Carefully scoop out the inside of the zucchini halves using a spoon.
  4. 4. Pour some water into a pot and heat it up.
  5. 5. Place the zucchini halves in a steamer basket over the hot water.
  6. 6. Steam the zucchini for about 10 minutes until they are tender.
  7. 7. Preheat the oven to 180 degrees Celsius with fan setting.
  8. 8. Lightly fry the bacon cubes in a dry pan.
  9. 9. Remove the crusts from the toast slices.
  10. 10. Grate the toast into fine crumbs using a grater.
  11. 11. Mix the toast crumbs with the breadcrumbs, egg yolks, and Parmesan.
  12. 12. Let the filling mixture soak for 15 minutes.
  13. 13. Fold in the fried bacon cubes into the filling.
  14. 14. Season the filling with pepper.
  15. 15. Fill the zucchini halves with the prepared mixture.
  16. 16. Bake the stuffed zucchini for about 15 to 20 minutes in the oven.
  17. 17. Remove the zucchini from the oven when they are golden brown.
  18. 18. Serve the zucchini on plates.
  19. 19. Garnish the dishes with fresh parsley.
