🍽️ Zucchini halves stuffed with ham and breadcrumbs

Ingredients
- 8 small zucchini
- 140 g bacon cubes
- 4 slices toast bread
- 40 g breadcrumbs
- 2 egg yolks
- 50 g grated parmesan
- pepper (from the mill)
- 2 tbsp chopped flat-leaf parsley
Instructions
- 1. Thoroughly wash the zucchini under running water.
- 2. Cut the zucchini in half lengthwise.
- 3. Carefully scoop out the inside of the zucchini halves using a spoon.
- 4. Pour some water into a pot and heat it up.
- 5. Place the zucchini halves in a steamer basket over the hot water.
- 6. Steam the zucchini for about 10 minutes until they are tender.
- 7. Preheat the oven to 180 degrees Celsius with fan setting.
- 8. Lightly fry the bacon cubes in a dry pan.
- 9. Remove the crusts from the toast slices.
- 10. Grate the toast into fine crumbs using a grater.
- 11. Mix the toast crumbs with the breadcrumbs, egg yolks, and Parmesan.
- 12. Let the filling mixture soak for 15 minutes.
- 13. Fold in the fried bacon cubes into the filling.
- 14. Season the filling with pepper.
- 15. Fill the zucchini halves with the prepared mixture.
- 16. Bake the stuffed zucchini for about 15 to 20 minutes in the oven.
- 17. Remove the zucchini from the oven when they are golden brown.
- 18. Serve the zucchini on plates.
- 19. Garnish the dishes with fresh parsley.
