🍽️ Crispy Zucchini Pea Fritters with Mint Yogurt Dip

Ingredients
- 200 g peas (freshly shelled or frozen)
- salt
- 2 zucchini
- 0.5 bunch parsley (10 g)
- 5 stems mint
- 250 g yogurt (3.5% fat)
- 1 tbsp lemon juice
- pepper
- 3 eggs
- 100 ml milk (3.5% fat)
- 100 g spelt wholemeal flour
- 0.5 tsp baking powder
- nutmeg
- 2 tbsp rapeseed oil
- 1 organic lemon
Instructions
- 1. Put the peas into boiling salted water and cook them for 5 minutes.
- 2. Rinse the peas with cold water to stop the cooking process and let them drain in a sieve.
- 3. Wash the zucchini and grate it finely.
- 4. Sprinkle the grated zucchini with salt and let it sit for 10 minutes to release moisture.
- 5. Wash the parsley and shake it dry.
- 6. Finely chop the parsley.
- 7. Wash the mint and shake it dry.
- 8. Set aside a few nice mint leaves for decoration.
- 9. Finely chop the rest of the mint.
- 10. Mix the chopped mint with the yogurt and lemon juice.
- 11. Season the dip with salt and pepper and adjust to taste.
- 12. Rinse the zucchini in a sieve after 10 minutes.
- 13. Squeeze the zucchini firmly to remove as much liquid as possible.
- 14. Place the zucchini in a bowl.
- 15. Add the eggs, milk, flour, and baking powder to the zucchini.
- 16. Add a pinch of salt and freshly grated nutmeg.
- 17. Mix everything well until a uniform batter forms.
- 18. Set aside half of the peas for decoration.
- 19. Stir the parsley and the remaining peas into the zucchini batter.
- 20. Heat a pan with 1 tablespoon of oil over medium heat.
- 21. Place 4 tablespoons of the zucchini mixture as small dollops into the hot pan.
- 22. Fry the fritters for 3 to 4 minutes per side until golden brown.
- 23. Remove the finished fritters from the pan.
- 24. Keep the fritters warm in the preheated oven at 80 degrees Celsius.
- 25. Repeat the process with the remaining batter until all fritters are baked.
- 26. Rinse the lemon under hot water.
- 27. Cut the lemon into wedges.
- 28. Arrange the fritters on plates.
- 29. Garnish the fritters with the remaining peas, the mint yogurt dip, the mint leaves, and the lemon wedges.
