  2. 2. Remove the tough ends of the zucchini.
  3. 3. Cut the vegetable into small cubes.
  4. 4. Heat the oil in a small frying pan.
  5. 5. Add the zucchini cubes to the hot pan.
  6. 6. Sauté the vegetable over medium heat.
  7. 7. Rinse the mint under cold water.
  8. 8. Pluck the fresh mint leaves from the stems.
  9. 9. Add the mint leaves to the zucchini in the pan.
  10. 10. Drizzle the mixture with the lime juice.
  11. 11. Season the whole thing with salt to taste.
  12. 12. Add freshly ground pepper.
  13. 13. Transfer all ingredients from the pan into the blender.
