  1. 1. Clean the zucchini thoroughly, wash them, trim the ends, and spiralize or julienne them into thin strips. Peel and finely chop the garlic. Rinse the parsley, pat it dry, and finely chop the leaves.
  2. 2. Heat the oil in a pan. Fry the salmon fillet over medium heat for 5–7 minutes on each side until it turns golden brown. Then remove it from the pan, let it rest briefly, and cut it into large pieces.
  3. 3. In the remaining oil, sauté the garlic over medium heat for 30 seconds until translucent. Add the zucchini noodles and cook for 2–3 minutes while stirring, until they are al dente.
  4. 4. Gently fold the salmon pieces into the zoodles. Wash the lemon with hot water, dry it, zest it finely, and squeeze out the juice. Add both along with three-quarters of the parsley and heat briefly without breaking the salmon apart.
  5. 5. Plate the zoodles with salmon, sprinkle with salt, pepper, and the remaining parsley, and serve immediately.
