  1. 1. Toast the coconut chips in a pan without added fat until golden brown.
  2. 2. Take half of the toasted coconut chips and chop them coarsely.
  3. 3. Peel the oranges and the grapefruit thoroughly to remove all white pith.
  4. 4. Cut the segments out of the fruit flesh and catch the released juice in a bowl.
  5. 5. Squeeze the remaining fruit pulp to extract the rest of the juice.
  6. 6. Stir the yogurt with the quark, the collected juice, and the sugar until the mixture is smooth.
  7. 7. Fold the chopped coconut chips into the quark mixture.
  8. 8. Divide the quark mixture evenly among four small bowls.
  9. 9. Garnish the quark portions with the orange and grapefruit segments.
  10. 10. Sprinkle the remaining coconut chips over the finished desserts.
