Ingredients
- 2 Grapefruits
- 4 Oranges
- 2 Red Onions
- 1 tsp Szechuan Pepper
- 1 tbsp chopped Pistachios
- 4 tbsp Grape Seed Oil
- 4 tbsp Orange Juice
- 2 tbsp Lemon Juice
- 1 tsp Honey
- Salt
- Basil (for garnish)
Instructions
- 1. Peel the grapefruits and oranges completely to remove all white pith.
- 2. Slice the fruit flesh into thin rounds.
- 3. Peel the red onions.
- 4. Slice the onions into thin rings.
- 5. Coarsely crush the peppercorns using a mortar or knife.
- 6. Heat a frying pan over medium-high heat.
- 7. Toast the crushed pepper and pistachios briefly in the hot pan.
- 8. Remove the pan from the heat and add two tablespoons of oil.
- 9. Sauté the onion rings in the oil for one to two minutes.
- 10. Allow the onions to cool down in the pan.
- 11. Add the remaining oil from the pan, the citrus fruit juice, and the honey into a large bowl.
- 12. Whisk the ingredients for the dressing well together.
- 13. Season the dressing to taste with salt.
- 14. Mix the cooled onion rings with the dressing.
- 15. Gently fold in the citrus fruits.
- 16. Garnish the finished salad with fresh basil leaves.
- 17. Serve the salad immediately.
