🍰 Citrus Fruits in Spiced Syrup

Ingredients
- 1 lemon
- 1 tbsp maple syrup
- 1 tsp brown sugar (or vanilla sugar)
- 4 cardamom pods
- 2 star anise
- 2 cloves
- 1 piece cinnamon stick (approx. 2 cm)
- 300 g pink grapefruit (1 pink grapefruit)
- 300 g oranges (2 oranges)
- 160 g clementines (4 clementines)
- 1 sprig mint
Instructions
- 1. Squeeze the halved lemon.
- 2. Pour the lemon juice into a small saucepan.
- 3. Add 200 milliliters of water.
- 4. Add maple syrup to the pot.
- 5. Add sugar to the pot.
- 6. Lightly crush the cardamom pods with a knife.
- 7. Add the crushed cardamom pods to the pot.
- 8. Add star anise to the pot.
- 9. Add cloves to the pot.
- 10. Add the cinnamon stick to the pot.
- 11. Heat the pot over medium heat.
- 12. Bring the mixture to a boil.
- 13. Let the mixture simmer gently for about 10 minutes.
- 14. Stir the mixture occasionally.
- 15. Peel the grapefruit.
- 16. Remove the white pith from the grapefruit.
- 17. Peel the oranges.
- 18. Remove the white pith from the oranges.
- 19. Cut out the grapefruit segments from the membranes.
- 20. Cut out the orange segments from the membranes.
- 21. Catch the fruit juice in a bowl.
- 22. Add the grapefruit segments to the bowl with the juice.
- 23. Add the orange segments to the bowl with the juice.
- 24. Peel the clementines.
- 25. Scrape off the white skin of the clementines with a knife.
- 26. Divide the clementines into segments.
- 27. Fold the clementine segments into the other fruit segments.
- 28. Let the spiced syrup cool down a bit.
- 29. Strain the spiced syrup through a fine sieve.
- 30. Pour the strained syrup over the fruits.
- 31. Let the fruits soak in the syrup for at least 10 minutes.
- 32. Wash the mint.
- 33. Shake the mint dry.
- 34. Pluck the mint leaves.
- 35. Sprinkle the mint leaves over the fruits.
- 36. Serve the dish.
