🍽️ Citrus Fruit Jelly

Ingredients
- 10 sheets white gelatin
- 250 g grapefruit fillet (the whole skin and all white membranes must be removed)
- 250 g honeydew melon flesh
- 80 g sugar
- 3 tbsp lemon juice
- 500 ml grapefruit juice
Instructions
- 1. Soak the gelatin in cold water.
- 2. Remove the pulp from both citrus fruits and cut it into coarse chunks.
- 3. Mix the fruit pulp with sugar and lemon juice.
- 4. Let the mixture marinate for one hour.
- 5. Then puree the marinated fruit pulp.
- 6. Press the puree through a fine sieve into a bowl.
- 7. Top up the bowl with the remaining juice until you have the desired amount.
- 8. Squeeze out the soaked gelatin and dissolve it in a hot water bath.
- 9. Take some of the grapefruit sauce and mix it with the dissolved gelatin.
- 10. Stir the gelatin mixture into the remaining sauce.
- 11. Taste the jelly and sweeten it further if needed.
- 12. Let the mixture cool down until it starts to set.
- 13. Pour the jelly into a large, decorative bowl.
- 14. Place the bowl in the refrigerator for about four hours.
