🥗 Fresh Citrus and Onion Salad with Toasted Pine Nuts

Ingredients
- 4 oranges
- 4 blood oranges
- 1 lime
- 1 small garlic clove
- 5 g ginger (1 piece)
- 20 g pine nuts (1 heaped tbsp)
- 1 red onion
- 1 tbsp honey
- sea salt
- cayenne pepper
- 4 sprigs oregano
Instructions
- 1. Peel the oranges and blood oranges completely. Remove the white pith between the fruit segments as well.
- 2. Slice the pitted oranges into thin rounds.
- 3. Squeeze the lime to extract the juice.
- 4. Peel the garlic clove and chop it finely.
- 5. Peel the ginger and grate it finely using a grater.
- 6. Heat a frying pan without adding any oil or butter.
- 7. Toast the pine nuts in the hot pan until they turn golden brown.
- 8. Peel the onion and slice it into thin rings.
- 9. Mix the chopped garlic, honey, grated ginger, and lime juice together in a small bowl.
- 10. Season the vinaigrette with sea salt and cayenne pepper to taste.
- 11. Distribute the orange slices evenly across four plates.
- 12. Sprinkle the onion rings and the toasted pine nuts over the salad.
- 13. Drizzle the prepared vinaigrette over the salad.
- 14. Wash the oregano leaves and shake them dry.
- 15. Garnish the finished salad with the oregano leaves.
