🍰 Colorful Citrus Salad with Creamy Vanilla Sauce

Ingredients
- 3 untreated oranges
- 2 untreated lemons
- 2 grapefruits
- 500 ml milk
- 1 vanilla pod
- 2 eggs
- 2 tbsp sugar
- 2 tsp cornstarch
- 1 pinch salt
- Mint (for garnishing)
Instructions
- 1. Peel the oranges, lemons, and grapefruit. Make sure to remove the white pith as well.
- 2. Carefully separate the fruit segments (fillets) from the membranes using a sharp knife.
- 3. Pour the milk (except for 2 tablespoons) and the sliced vanilla pod into a saucepan.
- 4. Bring the milk and vanilla pod to a boil.
- 5. Separate the eggs. Whisk the egg yolks with the sugar, starch, and the 2 tablespoons of cold milk.
- 6. Remove the saucepan with the hot milk from the heat.
- 7. Remove the vanilla pod from the milk.
- 8. Slowly pour the egg yolk milk mixture into the hot milk while stirring constantly.
- 9. Place the sauce back on the stove. Heat it briefly, but do not let it boil again.
- 10. Remove the sauce from the heat and let it cool down slightly.
- 11. Whip the egg whites with a pinch of salt until stiff peaks form.
- 12. Gently fold the whipped egg whites into the cooled vanilla sauce.
- 13. Place the citrus fruit segments into small bowls.
- 14. Garnish the salad with fresh mint leaves.
- 15. Serve the salad with the vanilla foam.
