  3. 3. Add the grated Parmesan.
  4. 4. Add the lemon juice.
  5. 5. Grate the lemon zest and add it.
  6. 6. Grate the orange zest and add it.
  7. 7. Mix all ingredients well together.
  8. 8. Check if the mixture is too moist.
  9. 9. If yes, stir in some more grated Parmesan.
  10. 10. Wet your hands with water.
  11. 11. Form small balls from the mixture.
  12. 12. Grate more Parmesan coarsely.
  13. 13. Roll the balls in the grated Parmesan.
  14. 14. Keep the balls cool until you serve them.
