  1. 1. Preheat the oven to 200°C fan-forced. Grease two small soufflé molds thoroughly and sprinkle sugar inside.
  2. 2. Beat the egg yolk together with the sugar until frothy, until the mixture takes on a light color.
  3. 3. Strain the quark and stir it together with the lemon juice and lemon zest into the egg yolk mixture.
  4. 4. Beat the egg whites stiff and slowly let the sugar trickle in.
  5. 5. Add one third of the egg whites to the egg yolk mixture, sift the flour over it and gently fold both in. Then carefully add the remaining egg whites.
  6. 6. Fill the molds up to three quarters with the batter. Carefully wipe butter and sugar from the upper edge that remains free.
  7. 7. Bake the soufflés in the preheated oven for about 10-12 minutes, dust them with powdered sugar and serve immediately.
