🍽️ Lemon Soufflé

Ingredients
- 1 egg yolk
- 20 g sugar
- 1 tbsp lemon juice (thinly peeled zest of one untreated lemon)
- 50 g quark
- 2 egg whites
- 10 g sugar
- 1 tsp flour
- 1 tsp powdered sugar
- 1 tbsp butter
- 2 tbsp sugar
Instructions
- 1. Preheat the oven to 200°C fan-forced. Grease two small soufflé molds thoroughly and sprinkle sugar inside.
- 2. Beat the egg yolk together with the sugar until frothy, until the mixture takes on a light color.
- 3. Strain the quark and stir it together with the lemon juice and lemon zest into the egg yolk mixture.
- 4. Beat the egg whites stiff and slowly let the sugar trickle in.
- 5. Add one third of the egg whites to the egg yolk mixture, sift the flour over it and gently fold both in. Then carefully add the remaining egg whites.
- 6. Fill the molds up to three quarters with the batter. Carefully wipe butter and sugar from the upper edge that remains free.
- 7. Bake the soufflés in the preheated oven for about 10-12 minutes, dust them with powdered sugar and serve immediately.
