🍽️ Fresh Lemon Ice Cups with Mint

Ingredients
- 0.5 handful Mint
- 6 untreated lemons
- 80 g Sugar
- 80 ml White wine
- 1 Egg white
Instructions
- 1. Rinse the mint under cold water and shake it dry.
- 2. Cut the mint into thin strips.
- 3. Set aside a few mint strips for decoration.
- 4. Finely chop the remaining mint.
- 5. Wash two untreated lemons with hot water.
- 6. Peel beautiful zest strips from the skin of these lemons and set them aside.
- 7. Grate the remaining skin of the two lemons finely.
- 8. Cut a small slanted lid off the top of the remaining four lemons.
- 9. Carefully squeeze the juice out of all four lemons.
- 10. Hollow out the lemons using a teaspoon to use the skin as a bowl.
- 11. Squeeze the removed lemon pulp well.
- 12. Put sugar, lemon zest, and wine (or water) into a pot.
- 13. Heat the mixture while stirring until the sugar is dissolved.
- 14. Let the mixture cool down.
- 15. Fill the cooled lemon mixture into the hollowed-out lemon shells.
- 16. Smooth the surface of the ice filling.
- 17. Put the lemon cups in the freezer for at least two hours.
- 18. Take the lemon cups out of the freezer shortly before serving.
- 19. Decorate the ice cups with the saved mint strips.
- 20. Sprinkle the lemon zest over the ice cups.
