  1. 1. Beat the butter with a mixer until it is creamy and airy.
  2. 2. Finely grate the zest of one whole lemon.
  3. 3. Squeeze the juice of the lemon.
  4. 4. Mix the lemon juice and zest with the butter, sugar, and egg yolk until you have a uniform mixture.
  5. 5. Pulverize the candied lemon peel (citron) together with the flour in a food processor until very fine.
  6. 6. Add the cornstarch and baking powder to the flour mixture and stir everything together until a smooth dough forms.
  7. 7. Cover the dough and place it in the refrigerator for one hour.
  8. 8. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  9. 9. Lightly flour a work surface.
  10. 10. Roll out the dough on the floured surface to a thickness of about 4 millimeters.
  11. 11. Cut out tree and mushroom shapes from the dough using cookie cutters.
  12. 12. Place the cookies on a baking sheet lined with baking paper.
  13. 13. Bake the cookies in the oven for 10 minutes.
  14. 14. Gently heat the jam in a small saucepan until it becomes liquid.
  15. 15. Brush the bottom of half of the cooled cookies with the warm jam.
  16. 16. Place the remaining cookies on top to form sandwiches.
  17. 17. Let the cookies cool down completely.
  18. 18. Whisk powdered sugar with a little lemon juice to make a thick icing.
  19. 19. Brush the top of the cookies with the icing.
  20. 20. Fill melted chocolate coating into a small piping bag.
  21. 21. Pipe dots with the chocolate onto the cookies if you like.
