🍰 Lemon Parfait with Fresh Fruit

Ingredients
- Juice of two lemons
- 80 g Sugar
- 2 packets Vanilla sugar
- Zested peel of 1 lemon
- Lemon balm
- 4 Yolks
- 400 ml Whipping cream
- 125 g Strawberries
- 1 Mango
- 2 tbsp Orange liqueur
Instructions
- 1. Put the lemon juice, sugar, vanilla sugar, and lemon zest into a saucepan.
- 2. Heat the mixture until it boils and the sugar has completely dissolved.
- 3. Rinse the lemon balm under cold water and shake it dry.
- 4. Pluck the leaves from the stems and set aside a few small leaves for decoration.
- 5. Finely chop the rest of the lemon balm.
- 6. Whisk the egg yolks in a separate bowl.
- 7. Pour the hot lemon syrup slowly in a thin stream into the egg yolks while whisking constantly.
- 8. Continue stirring until a creamy mass forms.
- 9. Place the bowl into a bath of cold water.
- 10. Stir the mixture until it has completely cooled down.
- 11. Whip the cream until stiff.
- 12. Gently fold in the whipped cream and the finely chopped lemon balm into the lemon mixture.
- 13. Pour the mixture into a narrow mold.
- 14. Place the mold in the freezer for 4 to 5 hours.
- 15. Rinse the strawberries briefly and remove the stems.
- 16. Slice the strawberries.
- 17. Peel the mango.
- 18. Slice the flesh into thin strips away from the fibrous pit.
- 19. Drizzle the prepared fruit with orange liqueur.
- 20. Unmold the parfait.
- 21. Slice the parfait into portions.
- 22. Arrange the parfait portions on plates.
- 23. Garnish the dishes with the fruit and the reserved lemon balm leaves.
- 24. Serve the parfait immediately.
