  1. 1. Put the lemon juice, sugar, vanilla sugar, and lemon zest into a saucepan.
  2. 2. Heat the mixture until it boils and the sugar has completely dissolved.
  3. 3. Rinse the lemon balm under cold water and shake it dry.
  4. 4. Pluck the leaves from the stems and set aside a few small leaves for decoration.
  5. 5. Finely chop the rest of the lemon balm.
  6. 6. Whisk the egg yolks in a separate bowl.
  7. 7. Pour the hot lemon syrup slowly in a thin stream into the egg yolks while whisking constantly.
  8. 8. Continue stirring until a creamy mass forms.
  9. 9. Place the bowl into a bath of cold water.
  10. 10. Stir the mixture until it has completely cooled down.
  11. 11. Whip the cream until stiff.
  12. 12. Gently fold in the whipped cream and the finely chopped lemon balm into the lemon mixture.
  13. 13. Pour the mixture into a narrow mold.
  14. 14. Place the mold in the freezer for 4 to 5 hours.
  15. 15. Rinse the strawberries briefly and remove the stems.
  16. 16. Slice the strawberries.
  17. 17. Peel the mango.
  18. 18. Slice the flesh into thin strips away from the fibrous pit.
  19. 19. Drizzle the prepared fruit with orange liqueur.
  20. 20. Unmold the parfait.
  21. 21. Slice the parfait into portions.
  22. 22. Arrange the parfait portions on plates.
  23. 23. Garnish the dishes with the fruit and the reserved lemon balm leaves.
  24. 24. Serve the parfait immediately.
