  1. 1. Preheat the oven to 180 degrees Celsius. If using fan-assisted heat, set it to 160 degrees Celsius. For gas ovens, use setting 2 to 3.
  2. 2. Line a muffin tin with 20 paper liners.
  3. 3. Beat the butter, whole cane sugar, vanilla sugar, and eggs with a hand mixer until frothy.
  4. 4. Mix the spelt flour, baking powder, lemon zest, and salt in a separate bowl.
  5. 5. Stir the flour mixture into the frothy butter-egg mixture.
  6. 6. Spoon the batter into the paper liners.
  7. 7. Bake the muffins in the preheated oven for about 20 to 30 minutes.
  8. 8. Remove the muffins from the oven.
  9. 9. Let them cool briefly in the tin.
  10. 10. Take the muffins out of the tin and let them cool completely.
  11. 11. Mix the powdered sugar with lemon juice, water, and food coloring.
  12. 12. Stir until you achieve a smooth consistency.
  13. 13. Frost the cooled muffins with the icing.
  14. 14. Decorate them with sugar sprinkles if desired.
