🍰 Lemon Muffins with Icing

Ingredients
- 150 g soft butter
- 100 g whole cane sugar
- 1 packet vanilla sugar
- 3 eggs
- 200 g spelt flour
- 0.5 pack baking powder
- 1 pinch salt
- 1 tsp lemon zest
- 250 g powdered sugar (from cane sugar)
- 1 tbsp lemon juice
- 2 tbsp water
- red food coloring
- pink sugar pearls
- pink sugar sprinkles
Instructions
- 1. Preheat the oven to 180 degrees Celsius. If using fan-assisted heat, set it to 160 degrees Celsius. For gas ovens, use setting 2 to 3.
- 2. Line a muffin tin with 20 paper liners.
- 3. Beat the butter, whole cane sugar, vanilla sugar, and eggs with a hand mixer until frothy.
- 4. Mix the spelt flour, baking powder, lemon zest, and salt in a separate bowl.
- 5. Stir the flour mixture into the frothy butter-egg mixture.
- 6. Spoon the batter into the paper liners.
- 7. Bake the muffins in the preheated oven for about 20 to 30 minutes.
- 8. Remove the muffins from the oven.
- 9. Let them cool briefly in the tin.
- 10. Take the muffins out of the tin and let them cool completely.
- 11. Mix the powdered sugar with lemon juice, water, and food coloring.
- 12. Stir until you achieve a smooth consistency.
- 13. Frost the cooled muffins with the icing.
- 14. Decorate them with sugar sprinkles if desired.
