Ingredients
- 2.2 kg untreated lemons (yields approx. 1 l lemon juice)
- 1 kg jam sugar (1:1)
Instructions
- 1. Wash all lemons under hot water and dry them thoroughly.
- 2. Peel the zest of three to four lemons in long, wide strips.
- 3. Cut the lemon zest into thin strips.
- 4. Squeeze all the lemons.
- 5. Measure exactly 1000 milliliters of lemon juice.
- 6. Put the lemon juice and the lemon zest into a large cooking pot.
- 7. Add the pectin sugar and stir the mixture well.
- 8. Heat the mixture over high heat and stir constantly.
- 9. Let the jam boil vigorously for four minutes.
- 10. Fill the hot jam to the brim into hot rinsed jars.
- 11. Seal the jars well.
