  2. 2. Peel the zest of three to four lemons in long, wide strips.
  3. 3. Cut the lemon zest into thin strips.
  4. 4. Squeeze all the lemons.
  5. 5. Measure exactly 1000 milliliters of lemon juice.
  6. 6. Put the lemon juice and the lemon zest into a large cooking pot.
  7. 7. Add the pectin sugar and stir the mixture well.
  8. 8. Heat the mixture over high heat and stir constantly.
  9. 9. Let the jam boil vigorously for four minutes.
  10. 10. Fill the hot jam to the brim into hot rinsed jars.
  11. 11. Seal the jars well.
