🍽️ Lemon Rabbit with Potatoes

Ingredients
- 1 rabbit (approx. 1 kg)
- 1 untreated lemon
- 1 handful pine nuts
- 1 jar white wine
- 4 tbsp olive oil
- 2 garlic cloves
- 1 tsp oregano
- 0.125 l meat broth (from the jar)
- 400 g small new potatoes
- salt
- pepper
Instructions
- 1. Cut the rabbit into bite-sized pieces.
- 2. Wash the meat pieces and pat them dry with a kitchen towel.
- 3. Peel the garlic cloves and chop them finely.
- 4. Mix the chopped garlic with olive oil and pine nuts in a small bowl.
- 5. Heat some olive oil in a large pot or casserole dish.
- 6. Fry the rabbit pieces on all sides until golden brown.
- 7. Add the garlic and pine nut mixture to the meat and fry briefly.
- 8. Deglaze the meat with white wine.
- 9. Let the mixture simmer for 5 minutes.
- 10. Peel the zest from half of the untreated lemon.
- 11. Finely chop the lemon zest.
- 12. Squeeze the juice from the remaining lemon.
- 13. Add the lemon juice, oregano, and chopped lemon zest to the pot.
- 14. Pour in the meat broth.
- 15. Simmer the dish on low heat with the lid closed for 45 minutes.
- 16. Wash the potatoes thoroughly.
- 17. Cook the potatoes in salted water for 25 minutes.
- 18. Slice the remaining half lemon into thin slices.
- 19. Serve the rabbit with the potatoes and lemon slices.
