  1. 1. Preheat the oven to 180 degrees Celsius. Set the fan to 160 degrees Celsius. Line two baking sheets with baking paper.
  2. 2. Add the egg yolks, sugar, vanilla sugar, and lemon flavoring to a bowl. Whisk the mixture with a mixer or whisk until it is light and frothy.
  3. 3. Add the ground almonds to the egg mixture. Knead the ingredients by hand or with a spoon until a soft and pliable dough forms.
  4. 4. Sprinkle some powdered sugar on a clean work surface. Roll out the dough on this surface to a thickness of about 3 millimeters.
  5. 5. Cut heart shapes out of the dough. Place the shaped hearts onto the prepared baking sheets.
  6. 6. Slide the sheets into the oven. Bake the cookies for 12 to 15 minutes.
  7. 7. Whisk powdered sugar and lemon juice in a small bowl until a smooth glaze forms.
  8. 8. Take the hot cookies out of the oven. Brush them immediately with the lemon glaze.
  9. 9. Carefully loosen the cookies from the baking paper. Let them cool completely before eating.
