🍽️ Lemon Heart Cookies

Ingredients
- 3 egg yolks
- 120 g sugar
- 1 packet vanilla sugar
- 5 drops lemon flavoring
- 200 g ground almond kernels
- 100 g powdered sugar (and a little for working)
- 2 tbsp lemon juice
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Set the fan to 160 degrees Celsius. Line two baking sheets with baking paper.
- 2. Add the egg yolks, sugar, vanilla sugar, and lemon flavoring to a bowl. Whisk the mixture with a mixer or whisk until it is light and frothy.
- 3. Add the ground almonds to the egg mixture. Knead the ingredients by hand or with a spoon until a soft and pliable dough forms.
- 4. Sprinkle some powdered sugar on a clean work surface. Roll out the dough on this surface to a thickness of about 3 millimeters.
- 5. Cut heart shapes out of the dough. Place the shaped hearts onto the prepared baking sheets.
- 6. Slide the sheets into the oven. Bake the cookies for 12 to 15 minutes.
- 7. Whisk powdered sugar and lemon juice in a small bowl until a smooth glaze forms.
- 8. Take the hot cookies out of the oven. Brush them immediately with the lemon glaze.
- 9. Carefully loosen the cookies from the baking paper. Let them cool completely before eating.
