🍽️ Lemon Chicken with Vegetables

Ingredients
- 4 chicken breast fillets
- 1 lemon (organic)
- 1 tbsp lemon juice
- 400 ml chicken broth
- 250 g broccoli florets
- 250 g carrots
- 250 g snow peas
- 1 onion
- salt
- pepper (from the mill)
- 2 tbsp chive rings
Instructions
- 1. Wash the lemon thoroughly, cut it into 8 thin slices and place them in a greased baking dish.
- 2. Cut the chicken breasts in half horizontally, season with pepper, place them on the lemon slices, drizzle with lemon juice, and add 125 ml of broth.
- 3. Prepare the vegetables, wash them, and chop them into small pieces.
- 4. Peel the onion and carrots, dice the onion, and cut the carrots into strips. Cook them with the remaining vegetables in the broth for about 10 minutes.
- 5. Grill the meat in a preheated oven at 250°C using the top heat or under the broiler for about 8-10 minutes.
- 6. Remove from the oven, season with salt, sprinkle with chives, arrange on the lemon slices, and serve with the vegetables.
