🍽️ Chicken Balls on Lemongrass Skewers

Ingredients
- 8 stalks lemongrass
- 400 g chicken breast fillet (ground through a meat grinder or very finely chopped)
- 2 eggs
- 2 red chili peppers (seeded and very finely chopped)
- 2 tbsp soy sauce
- salt
- pepper (from the mill)
- breadcrumbs
- 1 tbsp cilantro leaves (finely chopped)
- 1 garlic clove (finely chopped)
- sesame oil
Instructions
- 1. Place the chicken meat in a bowl.
- 2. Mix the meat with the soy sauce.
- 3. Let the marinade sit in the refrigerator for 1 to 2 hours.
- 4. Take the meat out of the marinade.
- 5. Add the eggs, chili, salt, pepper, coriander, and garlic to the meat.
- 6. Knead the ingredients well until they form a uniform mass.
- 7. Add the breadcrumbs gradually.
- 8. Make sure the mixture is not too firm but holds together well.
- 9. Slice the lemongrass stalks lengthwise.
- 10. Shape 16 oval balls from the meat mixture.
- 11. Insert one half of the lemongrass through the center of each meat ball.
- 12. Shape the balls with the lemongrass into an elongated form.
- 13. Lightly roll the balls in the breadcrumbs.
- 14. Heat 3 to 4 tablespoons of sesame oil in a large pan.
- 15. Fry the rolls one by one until golden brown on both sides.
- 16. Let the finished balls drain on kitchen paper.
- 17. Serve the skewers immediately.
- 18. Garnish with a sweet and sour sauce if desired.
