  1. 1. Place the chicken meat in a bowl.
  2. 2. Mix the meat with the soy sauce.
  3. 3. Let the marinade sit in the refrigerator for 1 to 2 hours.
  4. 4. Take the meat out of the marinade.
  5. 5. Add the eggs, chili, salt, pepper, coriander, and garlic to the meat.
  6. 6. Knead the ingredients well until they form a uniform mass.
  7. 7. Add the breadcrumbs gradually.
  8. 8. Make sure the mixture is not too firm but holds together well.
  9. 9. Slice the lemongrass stalks lengthwise.
  10. 10. Shape 16 oval balls from the meat mixture.
  11. 11. Insert one half of the lemongrass through the center of each meat ball.
  12. 12. Shape the balls with the lemongrass into an elongated form.
  13. 13. Lightly roll the balls in the breadcrumbs.
  14. 14. Heat 3 to 4 tablespoons of sesame oil in a large pan.
  15. 15. Fry the rolls one by one until golden brown on both sides.
  16. 16. Let the finished balls drain on kitchen paper.
  17. 17. Serve the skewers immediately.
  18. 18. Garnish with a sweet and sour sauce if desired.
