🍽️ Lemongrass Chicken Skewers with Peanut Dip

Ingredients
- 1 lime
- 60 g unsalted peanuts (4 tbsp)
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp liquid honey
- 3 tbsp rapeseed oil
- 25 g ginger (1 piece)
- 1 clove garlic
- 1 shallot
- 500 g chicken breast fillet (2 chicken breast fillets)
- 1 tsp sambal oelek
- salt
- pepper
- 8 stalks lemongrass
- 2 tbsp oil (for frying)
Instructions
- 1. Squeeze one lime to get the juice.
- 2. Add 2 tablespoons of lime juice, peanuts, rice vinegar, soy sauce, sesame oil, honey, and 2 tablespoons of water into a tall container.
- 3. Blend the mixture with a hand blender until smooth.
- 4. Pour in the rapeseed oil slowly while continuing to blend.
- 5. Keep stirring until the sauce becomes slightly creamy.
- 6. Set the finished sauce aside for later use.
- 7. Peel a piece of ginger and grate it finely.
- 8. Peel a garlic clove and chop it finely.
- 9. Peel a shallot and dice it finely.
- 10. Wash the chicken meat and pat it dry with a kitchen towel.
- 11. Remove all fat and sinew from the meat.
- 12. Cut the meat into small cubes of about 1 centimeter in size.
- 13. Pulverize the meat cubes in batches using a food processor.
- 14. Aim for a smooth meat paste.
- 15. Place the meat paste into a bowl.
- 16. Add the diced shallot, grated ginger, and chopped garlic.
- 17. Add some sambal oelek (a spicy chili paste).
- 18. Season the mixture with salt and pepper.
- 19. Wash the lemongrass stalks.
- 20. Remove the tough outer leaf layers.
- 21. Divide the meat paste into 8 equal portions.
- 22. Take one portion of meat and place it in your moistened palm.
- 23. Place a lemongrass stalk in the center of the meat portion.
- 24. Press the meat firmly around the thick end of the stalk.
- 25. Place the finished skewer on a lightly greased plate.
- 26. Repeat the process with all meat portions.
- 27. Preheat an oiled grill pan or a charcoal grill.
- 28. Place the skewers over medium heat.
- 29. Grill the skewers for 8 to 10 minutes.
- 30. Turn the skewers frequently to ensure even cooking.
- 31. Taste the dip again and adjust with salt and pepper.
- 32. Serve the dip alongside the hot skewers.
