  1. 1. Squeeze one lime to get the juice.
  2. 2. Add 2 tablespoons of lime juice, peanuts, rice vinegar, soy sauce, sesame oil, honey, and 2 tablespoons of water into a tall container.
  3. 3. Blend the mixture with a hand blender until smooth.
  4. 4. Pour in the rapeseed oil slowly while continuing to blend.
  5. 5. Keep stirring until the sauce becomes slightly creamy.
  6. 6. Set the finished sauce aside for later use.
  7. 7. Peel a piece of ginger and grate it finely.
  8. 8. Peel a garlic clove and chop it finely.
  9. 9. Peel a shallot and dice it finely.
  10. 10. Wash the chicken meat and pat it dry with a kitchen towel.
  11. 11. Remove all fat and sinew from the meat.
  12. 12. Cut the meat into small cubes of about 1 centimeter in size.
  13. 13. Pulverize the meat cubes in batches using a food processor.
  14. 14. Aim for a smooth meat paste.
  15. 15. Place the meat paste into a bowl.
  16. 16. Add the diced shallot, grated ginger, and chopped garlic.
  17. 17. Add some sambal oelek (a spicy chili paste).
  18. 18. Season the mixture with salt and pepper.
  19. 19. Wash the lemongrass stalks.
  20. 20. Remove the tough outer leaf layers.
  21. 21. Divide the meat paste into 8 equal portions.
  22. 22. Take one portion of meat and place it in your moistened palm.
  23. 23. Place a lemongrass stalk in the center of the meat portion.
  24. 24. Press the meat firmly around the thick end of the stalk.
  25. 25. Place the finished skewer on a lightly greased plate.
  26. 26. Repeat the process with all meat portions.
  27. 27. Preheat an oiled grill pan or a charcoal grill.
  28. 28. Place the skewers over medium heat.
  29. 29. Grill the skewers for 8 to 10 minutes.
  30. 30. Turn the skewers frequently to ensure even cooking.
  31. 31. Taste the dip again and adjust with salt and pepper.
  32. 32. Serve the dip alongside the hot skewers.
