🍳 Blackberry Lemongrass Jam

Ingredients
- 1 kg Blackberries
- 500 g Jam sugar (2:1)
- 2 stalks Lemongrass
- 2 drops Bitter almond flavoring
Instructions
- 1. Wash the blackberries thoroughly, drain them, and mix them with the sugar in a large saucepan.
- 2. Clean the lemongrass thoroughly and pound it soft with a meat mallet. Tie the stalks together and add them to the berries.
- 3. Bring the mixture to a boil while stirring constantly and let it bubble for about 4 minutes. Stir in the bitter almond oil towards the end.
- 4. Do a setting test, remove the lemongrass, and roughly puree the jam. Then fill the clean jars to the brim and let them cool upside down.
