🍽️ Fresh Lemon Jelly with Figs

Ingredients
- 6 sheets white gelatin
- 3 lemons (1 of them unwaxed)
- 125 ml dry white wine
- 3 tbsp sugar
- 4 fresh figs
- 1 packet vanilla sugar
- 4 tbsp white port wine (to taste)
Instructions
- 1. Soak the gelatin in a bowl of cold water for about 10 minutes.
- 2. Rinse the unwaxed lemon under hot water.
- 3. Cut a thin slice from the peel and set it aside for decoration.
- 4. Squeeze the lemons and pour the juice through a fine sieve.
- 5. Top up the juice with wine and water until you have exactly 0.5 liters of liquid.
- 6. Pour the mixture into a pot and stir in the sugar.
- 7. Heat the liquid while stirring constantly.
- 8. Remove the pot from the heat as soon as the mixture is hot.
- 9. Squeeze the soaked gelatin slightly and dissolve it in the hot lemon liquid.
- 10. Pour the lemon syrup into four dessert glasses.
- 11. Place the glasses in the refrigerator until the jelly is set.
- 12. Wash the figs and cut them into quarters.
- 13. Sprinkle the figs with vanilla sugar.
- 14. Drizzle the figs with port wine.
- 15. Cover the figs and let them marinate in the refrigerator.
- 16. Arrange the marinated figs on top of the cooled jelly.
- 17. Cut the reserved lemon peel into thin strips.
- 18. Sprinkle the lemon strips over the finished dessert.
