🍽️ Fresh Lemon Cured Salmon

Ingredients
- 2 Lemons (Organic)
- 2 cm Ginger
- Pink Pepper
- 150 g Sea Salt
- 75 g Sugar
- 600 g fresh salmon fillet (with skin)
- 1 Orange (Juice)
- 1 Lemon (Juice)
- 1 tsp Ginger (freshly grated)
- 1 tbsp Honey
- Arugula
- Pink Pepper
Instructions
- 1. Rinse the salmon under running water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Remove any remaining bones carefully with tweezers.
- 4. Peel the zest from the lemons, avoiding the white bitter pith.
- 5. Dice the lemon zest very finely.
- 6. Peel the ginger.
- 7. Grate the ginger finely or chop it small.
- 8. Mix the ginger with salt, pepper, sugar, and the lemon zest.
- 9. Take about one-third of this spice mixture.
- 10. Spread the spices on the bottom of a shallow dish.
- 11. Place the salmon skin-side down on the spices.
- 12. Cover the salmon with the remaining spice mixture.
- 13. Squeeze one whole lemon.
- 14. Drizzle the lemon juice evenly over the salmon.
- 15. Cover the dish tightly with plastic wrap.
- 16. Place the dish in the refrigerator for two days.
- 17. Turn the salmon once during the marinating time.
- 18. Remove the salmon from the cure after two days.
- 19. Pat the fish dry again.
- 20. Scrape off the chopped cure ingredients carefully.
- 21. Whisk orange and lemon juice with ginger and honey.
- 22. Slice the salmon into thin pieces.
- 23. Place the arugula on a platter.
- 24. Arrange the salmon slices on the arugula.
- 25. Sprinkle some pepper over the dish.
- 26. Drizzle the prepared sauce over the salmon.
- 27. Serve the dish immediately.
