🍽️ Fresh Lemon Dressing

Ingredients
- 1 lemon
- 1 shallot
- 2 tbsp lemon jam
- 1 tsp mustard (medium hot)
- 6 tbsp lemon oil
- salt
- lemon pepper
- 4 tbsp water
Instructions
- 1. Peel the shallot and cut it into small cubes.
- 2. Heat oil in a pan and sauté the shallot cubes until translucent.
- 3. Wash the lemon thoroughly.
- 4. Finely zest the lemon and add the zest to the shallots in the pan.
- 5. Pour the oil from the pan into a tall container.
- 6. Set the shallots and zest aside.
- 7. Peel the lemon completely with a sharp knife, removing all the white pith.
- 8. Cut the lemon segments away from the membranes.
- 9. Catch the juice that flows out.
- 10. Squeeze the juice from the remaining lemon parts.
- 11. Add the lemon segments and juice to the oil in the tall container.
- 12. Add mustard, jam, and spices.
- 13. Blend the mixture with an immersion blender until smooth.
- 14. Stir in the prepared shallot cubes.
- 15. Season the dressing to taste.
- 16. Fill the finished dressing into small bowls.
