🍳 Zesty Lemon-Lime Cream

Ingredients
- 3 unwaxed lemons
- 2 unwaxed limes
- 75 g butter
- 200 g sugar
- 3 eggs
Instructions
- 1. Wash the lemons and limes thoroughly under hot water.
- 2. Dry the fruits with a cloth.
- 3. Finely grate the zest of the lemons and limes.
- 4. Squeeze the juice out of all the fruits.
- 5. Pour the juice through a sieve to remove seeds and fibers.
- 6. Place a bowl containing butter, sugar, lemon zest, and lemon juice over a pot of hot water (bain-marie).
- 7. Stir the mixture vigorously until the butter has completely melted.
- 8. Whisk the eggs in a separate bowl.
- 9. Add the beaten eggs gradually to the warm butter-lemon mixture.
- 10. Continue stirring until the cream becomes thick and creamy.
- 11. Rinse the jars with hot water.
- 12. Fill the hot cream into the prepared jars.
- 13. Seal the jars tightly.
- 14. Let the cream cool down at room temperature.
- 15. Store the cream in the refrigerator.
