  1. 1. Wash the lemons and limes thoroughly under hot water.
  2. 2. Dry the fruits with a cloth.
  3. 3. Finely grate the zest of the lemons and limes.
  4. 4. Squeeze the juice out of all the fruits.
  5. 5. Pour the juice through a sieve to remove seeds and fibers.
  6. 6. Place a bowl containing butter, sugar, lemon zest, and lemon juice over a pot of hot water (bain-marie).
  7. 7. Stir the mixture vigorously until the butter has completely melted.
  8. 8. Whisk the eggs in a separate bowl.
  9. 9. Add the beaten eggs gradually to the warm butter-lemon mixture.
  10. 10. Continue stirring until the cream becomes thick and creamy.
  11. 11. Rinse the jars with hot water.
  12. 12. Fill the hot cream into the prepared jars.
  13. 13. Seal the jars tightly.
  14. 14. Let the cream cool down at room temperature.
  15. 15. Store the cream in the refrigerator.
