  1. 1. Put the lemon juice, half of the wine, the ginger, and the sugar into a pot.
  2. 2. Heat the mixture until it boils.
  3. 3. Whisk the starch and the egg yolk with the remaining wine in a separate bowl.
  4. 4. Pour the mixed starch and egg yolk mixture into the boiling lemon liquid.
  5. 5. Let the cream boil briefly again.
  6. 6. Remove the cream from the heat and let it cool down.
  7. 7. Fold in the mascarpone spoonful by spoonful into the cooled lemon cream.
  8. 8. Fill the cream into dessert glasses.
  9. 9. Place the glasses in the refrigerator until they are cold.
  10. 10. Garnish the finished cream with strips of lemon zest before serving.
