🍽️ Fruity Lemon Cream

Ingredients
- 0.25 l lemon juice
- 0.25 l white wine
- 2 tsp ginger
- 150 g sugar
- 40 g cornstarch
- 250 g mascarpone
- 2 egg yolks
- lemon peel strips (for garnish)
Instructions
- 1. Put the lemon juice, half of the wine, the ginger, and the sugar into a pot.
- 2. Heat the mixture until it boils.
- 3. Whisk the starch and the egg yolk with the remaining wine in a separate bowl.
- 4. Pour the mixed starch and egg yolk mixture into the boiling lemon liquid.
- 5. Let the cream boil briefly again.
- 6. Remove the cream from the heat and let it cool down.
- 7. Fold in the mascarpone spoonful by spoonful into the cooled lemon cream.
- 8. Fill the cream into dessert glasses.
- 9. Place the glasses in the refrigerator until they are cold.
- 10. Garnish the finished cream with strips of lemon zest before serving.
