  1. 1. Rinse the lemon under hot water and pat it dry.
  2. 2. Finely grate the lemon zest.
  3. 3. Cut the lemon in half and squeeze out the juice.
  4. 4. Measure out approximately 50 milliliters of lemon juice.
  5. 5. Place the gelatin in a small pot with the lemon juice.
  6. 6. Let the gelatin soak in the juice for 10 minutes.
  7. 7. Stir the yogurt together with the lemon zest.
  8. 8. Warm the gelatin mixture over medium heat until it dissolves.
  9. 9. Do not use too high heat and do not let the mixture boil.
  10. 10. Set aside three tablespoons of the yogurt-lemon mixture.
  11. 11. Stir the warm gelatin mixture into the three tablespoons of yogurt.
  12. 12. Add the yogurt-gelatin mixture back to the remaining yogurt and stir everything well.
  13. 13. Put the cream into a bowl.
  14. 14. Add two level tablespoons of coconut blossom sugar to the cream.
  15. 15. Whip the cream until stiff.
  16. 16. Separate the eggs into yolks and whites.
  17. 17. Whip the egg whites until stiff.
  18. 18. Slowly add one tablespoon of coconut blossom sugar to the egg whites while continuing to whip.
  19. 19. Use the egg yolk for another purpose.
  20. 20. Wait until the yogurt starts to set slightly.
  21. 21. Gently fold the whipped cream into the yogurt mixture.
  22. 22. Now gently fold in the whipped egg whites.
  23. 23. Place the mousse in the refrigerator for two to three hours.
  24. 24. Peel the grapefruit so that all white skin remnants are removed.
  25. 25. Separate the fruit flesh from the membranes.
  26. 26. Place the fruit flesh in a bowl.
  27. 27. Add the remaining coconut blossom sugar and orange juice.
  28. 28. Mix everything in the bowl.
  29. 29. Distribute the grapefruit fillets on plates.
  30. 30. Warm a spoon.
  31. 31. Scoop quenelles out of the lemon mousse using the warm spoon.
  32. 32. Place the mousse quenelles on top of the grapefruit fillets.
