  1. 1. Cook the tagliatelle in plenty of salted water according to the package instructions until al dente.
  2. 2. Season the schnitzels, then fry in heated clarified butter for about 2 minutes on each side until golden brown. Remove and cover with aluminum foil to rest.
  3. 3. Sweat the shallot and garlic in the remaining fat, then deglaze with cognac and broth. Simmer briefly and blend. Add lemon zest, enrich with crème fraîche, and season with salt and pepper.
  4. 4. Slice the other lemon into thin slices and arrange decoratively on pre-warmed plates. Drain the tagliatelle, twirl with a fork, and serve alongside. Place two schnitzels on each plate, pour the sauce over them, and garnish with lemon balm.
