  1. 1. Rinse the lemon under hot water and pat it dry.
  2. 2. Grate the fine zest from the lemon using a grater.
  3. 3. Squeeze the lemon to extract the juice.
  4. 4. Stir the quark in a bowl with the yogurt.
  5. 5. Add the lemon juice and honey to the quark mixture and stir everything well.
  6. 6. Fill the cream into four small bowls.
  7. 7. Place the bowls in the refrigerator for about one hour.
  8. 8. Put the sugar and two tablespoons of water into a small saucepan.
  9. 9. Bring the mixture in the saucepan to a boil.
  10. 10. Reduce the heat to very low.
  11. 11. Let the liquid simmer for about three minutes.
  12. 12. Add the lemon zest to the saucepan.
  13. 13. Let the zest cook in the liquid for about two minutes.
  14. 14. Let the syrup cool down completely.
  15. 15. Drizzle the cooled lemon syrup over the cold cream.
  16. 16. Serve the dessert immediately.
