  1. 1. Rinse the lemons under hot water and pat them dry.
  2. 2. Roll the lemons back and forth on the work surface with your flat hand to soften them.
  3. 3. Cut off a thin slice from the top and bottom so the lemons stand stably.
  4. 4. Squeeze the lemons gently with your hands and catch the juice in a bowl.
  5. 5. Carefully remove the pulp with a melon baller without damaging the peel.
  6. 6. Take the lemon sorbet from the freezer and let it thaw for 5 to 8 minutes.
  7. 7. Wash the mint, shake off excess water, and pluck the leaves off.
  8. 8. Finely chop the mint.
  9. 9. Place the sorbet in a separate bowl.
  10. 10. Add the chopped mint, 2 tablespoons of lemon juice, and the yogurt.
  11. 11. Whisk the mixture vigorously with a whisk.
  12. 12. Fill the mixture into a disposable piping bag.
  13. 13. Fill the empty lemon peel with the cream.
  14. 14. Place the cut-off lid back on the lemons.
  15. 15. Put the lemons back in the freezer for 5 to 6 hours.
  16. 16. Serve the dessert chilled.
