🍽️ Soft Cinnamon Stars

Ingredients
- 500 g almond kernels (ground)
- 5 egg whites
- 450 g powdered sugar from birch sugar
- 2 tsp cinnamon
- 1 organic lemon
Instructions
- 1. Whisk the egg whites until stiff.
- 2. Stir in the powdered sugar.
- 3. Set aside one cup of the egg white mixture for the glaze.
- 4. Rinse the lemon under hot water and pat it dry.
- 5. Grate the lemon zest and squeeze out the juice.
- 6. Add the almonds, cinnamon, lemon zest, and two tablespoons of lemon juice to the remaining egg white mixture.
- 7. Quickly knead the ingredients into a dough.
- 8. Cover the dough and place it in the refrigerator for about one hour.
- 9. Roll out the dough on a work surface to a thickness of about four millimeters.
- 10. Cut out stars of various sizes from the dough.
- 11. Coat the stars evenly with the reserved glaze.
- 12. Place the stars on a baking sheet lined with baking paper.
- 13. Preheat the oven.
- 14. Bake the cinnamon stars at 160 degrees Celsius conventional heat, 140 degrees Celsius fan-forced, or gas level 1 to 2 for about eight minutes.
- 15. Ensure that the stars remain soft inside and the surface stays white.
