  3. 3. Set aside one cup of the egg white mixture for the glaze.
  4. 4. Rinse the lemon under hot water and pat it dry.
  5. 5. Grate the lemon zest and squeeze out the juice.
  6. 6. Add the almonds, cinnamon, lemon zest, and two tablespoons of lemon juice to the remaining egg white mixture.
  7. 7. Quickly knead the ingredients into a dough.
  8. 8. Cover the dough and place it in the refrigerator for about one hour.
  9. 9. Roll out the dough on a work surface to a thickness of about four millimeters.
  10. 10. Cut out stars of various sizes from the dough.
  11. 11. Coat the stars evenly with the reserved glaze.
  12. 12. Place the stars on a baking sheet lined with baking paper.
  13. 13. Preheat the oven.
  14. 14. Bake the cinnamon stars at 160 degrees Celsius conventional heat, 140 degrees Celsius fan-forced, or gas level 1 to 2 for about eight minutes.
  15. 15. Ensure that the stars remain soft inside and the surface stays white.
