  1. 1. Beat the egg whites together with a pinch of salt until stiff.
  2. 2. Slowly sprinkle in the powdered sugar and continue beating until the mixture is smooth.
  3. 3. Add the lemon juice and beat the mixture again until stiff and glossy.
  4. 4. Remove about three to four tablespoons of the egg mixture and set it aside in a cool place for the glaze.
  5. 5. Mix the ground almonds with the lemon zest and cinnamon.
  6. 6. Gently fold the almond mixture into the remaining egg white foam.
  7. 7. Knead everything together into a pliable dough.
  8. 8. Sprinkle some ground almonds on the work surface to prevent the dough from sticking.
  9. 9. Roll out the dough to a thickness of six to eight millimeters.
  10. 10. Cut out star shapes from the dough and place them on a baking sheet lined with baking paper.
  11. 11. Brush the stars with the reserved egg mixture.
  12. 12. Let the stars dry overnight at room temperature if possible.
  13. 13. Preheat the oven to 120 degrees Celsius using top and bottom heat.
  14. 14. Dry the stars in the oven for about 25 minutes.
  15. 15. Ensure the stars dry rather than bake so that the glaze stays light.
  16. 16. Let the stars cool completely on the baking sheet.
