🍰 Crispy Cinnamon Stars with Icing

Ingredients
- 275 g ground almond kernels (+ 2 tbsp for working)
- 2 tsp cinnamon powder
- 300 g powdered sugar from whole cane sugar
- 4 egg whites (size M)
Instructions
- 1. Pour the almonds onto a clean work surface.
- 2. Press a small well into the center of the almond pile with your hand.
- 3. Sprinkle the cinnamon directly onto the almonds.
- 4. Add 175 grams of powdered sugar and the three egg whites into the well.
- 5. Knead the ingredients from the center outwards to form a firm dough.
- 6. Add more ground almonds if necessary so the dough no longer sticks to your fingers.
- 7. Wrap the dough tightly in cling film.
- 8. Place the foil in the refrigerator for at least four hours, preferably overnight.
- 9. Sprinkle some ground almonds on the work surface to prevent sticking.
- 10. Roll out the dough thinly on the prepared surface.
- 11. Ensure the dough thickness is between six and eight millimeters.
- 12. Put the rolled-out dough back in the refrigerator for about one hour.
- 13. Put the remaining egg white into a small bowl.
- 14. Stir the remaining powdered sugar into the egg white while stirring continuously.
- 15. Mix the mass until a thick icing forms.
- 16. Take the dough out of the refrigerator.
- 17. Brush the surface thinly with the icing.
- 18. Use only about four to five tablespoons of icing to keep the weight down.
- 19. Place the iced cookies back in the refrigerator for about one hour.
- 20. Line a baking tray with baking paper.
- 21. Cut stars out of the cold dough.
- 22. Dip the cookie cutter briefly in hot water if the dough sticks too much.
- 23. Place the stars on the prepared baking tray.
- 24. Preheat the oven to 200 degrees Celsius conventional heat.
- 25. Set the fan temperature to 180 degrees if your oven has a fan.
- 26. Set the gas level to 3 if you use a gas oven.
- 27. Bake the stars for about ten minutes.
- 28. Keep the oven door slightly open during baking.
- 29. Ensure the icing stays white and only browns slightly on the bottom.
- 30. Knead the dough scraps back together with a little ground almonds while baking.
- 31. Cut more stars out of the leftover dough.
- 32. Brush these new stars with the reserved icing.
- 33. Take the finished cinnamon stars out of the oven.
- 34. Let the cookies cool down completely on the baking tray.
