  1. 1. Prep: Preheat your oven to 200 degrees Celsius (top/bottom heat, middle rack).
  2. 2. Mix the milk with one tablespoon of sugar and the yeast in a small bowl until the yeast has dissolved.
  3. 3. Put flour, butter, the remaining sugar, and the egg yolk into a large mixing bowl.
  4. 4. Pour the yeast milk into the bowl with the dry and wet ingredients.
  5. 5. Knead everything with the dough hooks of an electric hand mixer until you have a smooth dough.
  6. 6. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
  7. 7. Knead the risen dough briefly on a lightly floured surface.
  8. 8. Roll the dough out into a rectangle of approx. 20 x 30 centimeters.
  9. 9. Mix the remaining sugar with the ground cloves and cinnamon in a small bowl.
  10. 10. Spread the cinnamon-sugar mixture evenly over the entire surface of the dough.
  11. 11. Roll the dough up tightly starting from the longer side.
  12. 12. Cut the dough roll into 6 equal slices.
  13. 13. Place the slices on a baking sheet lined with baking paper.
  14. 14. Cover the trays and let the rolls rise for another 20 minutes.
  15. 15. Brush the rolls with the remaining melted butter.
  16. 16. Bake the cinnamon rolls in the preheated oven for approx. 25 minutes until golden brown.
  17. 17. Take the rolls out of the oven while they are still hot.
  18. 18. Roll the hot cinnamon rolls in the remaining sugar-cinnamon mixture until fully coated.
