  1. 1. Pour the flour and ground almonds onto a clean work surface.
  2. 2. Create a well in the center of the dry ingredients.
  3. 3. Sprinkle the cinnamon directly onto the ground almonds.
  4. 4. Add the honey and egg whites into the center of the well.
  5. 5. Work the ingredients from the center outwards to form a smooth dough.
  6. 6. Knead the dough until it no longer sticks to your fingers.
  7. 7. If the dough is too sticky, add a little more ground almonds.
  8. 8. Wrap the finished dough tightly in plastic wrap.
  9. 9. Place the foil-wrapped dough in the refrigerator for at least 30 minutes.
  10. 10. Ideally, let the dough chill overnight.
  11. 11. Sprinkle some ground almonds onto your work surface.
  12. 12. Roll out the dough on the dusted surface to a thickness of 4 to 5 millimeters.
  13. 13. Cut out stars from the dough using a cookie cutter.
  14. 14. Place the stars on a baking sheet lined with baking paper.
  15. 15. Put the tray in the refrigerator for about 1 hour.
  16. 16. Preheat the oven to 200 degrees Celsius conventional heat.
  17. 17. If you use a fan oven, set it to 180 degrees Celsius.
  18. 18. Bake the stars for 10 to 15 minutes until golden brown.
  19. 19. Remove the tray from the oven.
  20. 20. Let the stars cool completely on a wire rack.
  21. 21. Put the powdered sugar into a bowl.
  22. 22. Add the lemon juice and stir until smooth.
  23. 23. The icing should be thick and viscous.
  24. 24. Fill the icing into a piping bag.
  25. 25. Decorate the cooled stars as you like.
