🍽️ Cinnamon Stars with Icing

Ingredients
- 250 g ground almond kernels (approx.)
- 2 tsp cinnamon powder
- 75 g honey (5 tbsp)
- 150 g spelt wholemeal flour
- 3 egg whites
- 80 g powdered sugar from birch sugar
- 1 tbsp lemon juice
Instructions
- 1. Pour the flour and ground almonds onto a clean work surface.
- 2. Create a well in the center of the dry ingredients.
- 3. Sprinkle the cinnamon directly onto the ground almonds.
- 4. Add the honey and egg whites into the center of the well.
- 5. Work the ingredients from the center outwards to form a smooth dough.
- 6. Knead the dough until it no longer sticks to your fingers.
- 7. If the dough is too sticky, add a little more ground almonds.
- 8. Wrap the finished dough tightly in plastic wrap.
- 9. Place the foil-wrapped dough in the refrigerator for at least 30 minutes.
- 10. Ideally, let the dough chill overnight.
- 11. Sprinkle some ground almonds onto your work surface.
- 12. Roll out the dough on the dusted surface to a thickness of 4 to 5 millimeters.
- 13. Cut out stars from the dough using a cookie cutter.
- 14. Place the stars on a baking sheet lined with baking paper.
- 15. Put the tray in the refrigerator for about 1 hour.
- 16. Preheat the oven to 200 degrees Celsius conventional heat.
- 17. If you use a fan oven, set it to 180 degrees Celsius.
- 18. Bake the stars for 10 to 15 minutes until golden brown.
- 19. Remove the tray from the oven.
- 20. Let the stars cool completely on a wire rack.
- 21. Put the powdered sugar into a bowl.
- 22. Add the lemon juice and stir until smooth.
- 23. The icing should be thick and viscous.
- 24. Fill the icing into a piping bag.
- 25. Decorate the cooled stars as you like.
