  1. 1. Whip the egg whites with a pinch of salt until stiff.
  2. 2. Gradually stir in the sugar and continue whipping until a smooth meringue forms.
  3. 3. Add the lemon juice and whip the mixture until glossy and stiff.
  4. 4. Remove 3 to 4 tablespoons of the mixture for the glaze and keep it cold.
  5. 5. Mix the almonds with the cinnamon and, if desired, a little gingerbread spice.
  6. 6. Gently fold the spiced almonds into the remaining meringue.
  7. 7. Stir everything together to form a pliable dough.
  8. 8. Sprinkle some flour or ground nuts onto your work surface.
  9. 9. Roll out the dough to a thickness of 6 to 8 millimeters.
  10. 10. Cut out star shapes from the dough.
  11. 11. Place the stars on a baking sheet lined with baking paper.
  12. 12. Brush the stars with the reserved glaze.
  13. 13. Let the stars dry overnight at room temperature.
  14. 14. Preheat the oven to 120 degrees Celsius with top and bottom heat.
  15. 15. Place the dried stars in the oven.
  16. 16. Dry them for about 25 minutes so that the glaze only browns slightly.
  17. 17. Let the stars cool down on the baking sheet.
