🍽️ Crispy Cinnamon-Almond Stars with Sugar Glaze

Ingredients
- 4 egg whites
- 1 pinch salt
- 300 g sugar
- 2 tbsp lemon juice
- 2 tsp cinnamon powder
- 1 tsp gingerbread spice
- 350 g ground almond kernels (unblanched)
- flour for working (or ground nuts)
Instructions
- 1. Whip the egg whites with a pinch of salt until stiff.
- 2. Gradually stir in the sugar and continue whipping until a smooth meringue forms.
- 3. Add the lemon juice and whip the mixture until glossy and stiff.
- 4. Remove 3 to 4 tablespoons of the mixture for the glaze and keep it cold.
- 5. Mix the almonds with the cinnamon and, if desired, a little gingerbread spice.
- 6. Gently fold the spiced almonds into the remaining meringue.
- 7. Stir everything together to form a pliable dough.
- 8. Sprinkle some flour or ground nuts onto your work surface.
- 9. Roll out the dough to a thickness of 6 to 8 millimeters.
- 10. Cut out star shapes from the dough.
- 11. Place the stars on a baking sheet lined with baking paper.
- 12. Brush the stars with the reserved glaze.
- 13. Let the stars dry overnight at room temperature.
- 14. Preheat the oven to 120 degrees Celsius with top and bottom heat.
- 15. Place the dried stars in the oven.
- 16. Dry them for about 25 minutes so that the glaze only browns slightly.
- 17. Let the stars cool down on the baking sheet.
